What Am I Missing

I have just received a VPI Prime table. I have an Ortofon Cadenza Bronze on the arm. In order for me to get average volume I have to turn the Moon Integrated 3.3 amp up to almost 80% of it's dial capacity.

I had an older table on the Moon which didn't cause me to do this with the volume.

Your suggestions please.

Thanks for the suggestions which I will try. I bought privately so won't be able to return. I have a second system I can put it with that will work if all else fails.
Did you buy the new cartridge from a dealer? He should have asked you what it was going to be plugged into, to insure compatibility. If you did, see if he'll let you exchange the cartridge for one with higher output.
"I had an older table on the Moon which didn't cause me to do this with the volume."

The table has NOTHING to do with this. It's the cartridge's output that determines this. What cartridge did you have before? It was probably a higher output MC or even a MM. The Ortofon Cadenza has only a .4mv output, so yeah, you'll need to boost that.

Peter is spot on with his advice as along as you have the MC card installed. If not, you'll need a SUT or a different phono stage with MC capability.

Also, you should load that cart at around 100-120 ohms or so.

Could be a gravity problem with the new table. :-)

Agree with Peter, change the jumpers on the phone board to MC. Look at his link to the manual.
Was your old cartridge a MC also ? I assume your I3 have the optional Phono Board installed, which have a gain selection switch/header located about in the middle of the card (J17) this should be set for MC with the Cadenza Bronze.
