@thecarpathian & @gkelly you may (or not?) know that the renowned scientist Seamus Blackley (aka the father of the Xbox), who is a “bread-nerd” and somewhat famed for his resurrecting yeast from a 4,000 year old Egyptian loaf of bread, wrote an amazing Twitter thread on his experiments in recreating as closely as he could the genuine bagels that late 19th Century Polish Ashkenazi Jew made as immigrants to New York.
