The West Coast versus the NY ones…… two kinds of cooks and tastes.

Not necessarily. I and Joy Bagels in Encino (L. A. area)  made the real thing. Whenever I had to drive through LA in the late 70’s/early 80’s, I'd make a point of stopping to pick some up. 

 

...and you can find plenty of sub-par bagels back east. But who can best discern the differences-- scientists or hedonists?

They have to made using the local water supply. Both urban and metro NY as well as Boston and metro have the advantage pristine man-made water supplies piped in from vast distances through aqueduct systems built up over the last couple of centuries. Quite forward thinking I think and also produces the best tasting bagels!
