Archiving VHS to DVD
If you're looking for simplicity, there are also units that take the output of a VCR and burn them directly to DVD-R. I know Sony has at least one. There are also units that have both a VCR and a DVD burner. 
Using a CDP to copy a cd to computer
Another vote for EAC here. I've even had it correct flaws in CDs that would otherwise be unplayable.

If your cable box as a 3 prong plug, try lifting the ground on it with a cheater plug. It should cost about 50 cents and may fix the hum.
