Just one set. Use the pair that is directly connected instead of the pair that is connected to the main pair.
Jadis Defy 7 Speaker connections

I just picked up a pair of Monoblocked Defy7s. It came with the manuals, however they are pretty useless.
the amp has 2 sets of binding posts on each amp. I use Single wire speaker cables, should I just be using connecting on 1 set or using some sort of jumper between both sets?
