Advice on Speaker upgrade vs System Component Upgrade
Your local dealer would probably deliver and set up the speakers in your home for you to evaluate for a time, especially at that price point.  I’d have a console with them to see what they think.   
Crossover frequency curves - what should I be looking for?
Generally, you would want the summed responses of all the drivers to be equal across the entire spectrum.  This can change, sometimes dramatically, when listening off-axis where phase-issues between the drivers at those crossover frequencies revea... 
Perplexed on how single driver speakers can cover such a large Hz range
I think you can get full-range drivers to play some good bass, in-room.  But the cost would be cabinet size.  You can take a larger 10"-15" full-range driver, but with their reduced xmax, they need a big enclosure to reach into the lower frequenci... 
In Walls
Leon, James Loudspeakers, Phase Technology and Wisdom Audio are all top-notch.  Most all the pedestrian brands I have come across over the many years like Polk, Klipsch, etc. are "meh" at best.

Probably the tweeter height would be my biggest concern. It might be way too low.

Of the $1500 budget, I'd spend about $500 - $600 on a nice, basic turntable, pick up a set of Klipsch The Fives powered speakers and with the funds remaining, some vinyl to play.

The JBL Synthesis system is pretty serious.     You could also look at the Phase Technology Darts system as well as the James Loudspeaker offerings.    Both are handled by custom integration firms so you would have to find dealers in your area.

Your experience of moving to two subs
In our last house, I had 2 subs and it was fantastic. Everything was improved. The only hard part was spending considerable time integrated them both properly with one another and the room.
